Easy 20min Breakfast Protein Muffins

So I made these on a complete whim the other day because I had all these blueberries to eat up, and was thinking that maybe if I could create a yummy breakfast treat it would be the perfect combo.

We use KODIAK protein pancake mix, and ususally find it at BJ’s or Target (I can also vouch for many of the other flavors that we love:

  • Almond Poppy Seed

  • Birthday Cake

  • Chocolate Chip

  • Buttermilk

  • Carb Conscious

  • Cinnamon Oat

  • Dark Chocolate

RECIPE:

  • 2 cup Kodiak protein pancake mix

  • 2 cup water (and tsp’s more of water in case is too sticky - needs to be thick, but soupy — NOT sticky like dough)

  • 1 tsp of cinnamon (measure with your heart)

  • 1 cup blueberries

    • **you can also add in whatever you’d like! I mixed chocolate chips + blueberries because that’s what I had. But you can easily add in whatever fruit or topping you’d like!

STEPS:

  • Preheat oven to 350, spray your muffin pan, or use reusable liners

  • water & pancake mix in bowl until soupy batter (add more water if it’s too thick!)

  • add In your additional ingredients (or just leave plain if you’d like!)

  • bake for about 15-17min (til cooked through and slightly browned)

  • let cool, and enjoy warm!

  • these can be stored in tupperware, or frozen for later!
